Instant Pot Split Pea and Barley Soup

Simple, hardy, vegan, and wholesome.

Put these into an Instant Pot:

  •     1 pound dried split peas, rinsed and sorted
  •     1/2 cup uncooked pearl barley or pot barley
  •     8 cups water
  •     2 bay leaves
  •     1 tsp salt
  •     1 Tbsp soy sauce
  •     1 tsp dried thyme
  •     1 tsp garlic powder
  •     1/2 tsp dried sage
  •     1/4 tsp ground cumin
  •     1 1/2 cups diced carrots
  •     1/2 cup minced yellow onion
  •     1/3 cup finely diced celery

Pressure cook for 15 minutes, allowing for a natural release. Before serving, add:

  •     1/2 cup diced green onions
  •     1 Tbsp fresh lemon juice
  •     Salt and pepper, soy sauce to taste
